Healthy Shepherds Pie


In the spirit of Thanksgiving, I wanted to give you guys a healthy southern cooking recipe! Yes, that’s a thing! We absolutely love making Shepherds Pie with a cauliflower puree mash instead of traditional mash potatoes. It taste amazing and cuts down on your carb intake.

Okay, let’s get to the recipe..

Roast

Cook the roast with or without veggies, it’s up to the cook! We like chuck roast!

  • Pat the meat dry with a paper towel
  • Add salt, pepper and flour
  • Add a little peanut or vegetable oil in the bottom of a Dutch oven, heat oil and then seer the roast on all sides
  • Bake covered for about 2 1/2- 3 hours at 350, turn meat halfway through
  • An hour before meat is done, add vegetables – we like potatoes, onions, garlic and celery
  • Once the roast is cooked and cooled, pull the meat apart into sizes you prefer for layering and eating

Collard Greens

We made collard greens for our green layer. You can add the normal English peas or whatever you love!

  • Wash and chop collard greens
  • Heat oil in a large pot over medium-high heat
  • Add ham (or bacon) and cook until crisp
  • Remove ham (or bacon) from pan, crumble and return to the pan
  • Add chopped onions, cook until tender (about 5 minutes)
  • Add 2 gloves of minced garlic and cook until fragrant
  • Add collard greens and fry until they start to wilt
  • Fill pot with 3 cups of chicken stock
  • Add salt, pepper and whatever seasonings you like.. we like to add Tony’s creole seasonings for a little spice!
  • Add hot sauce of your choice if you would like even more of a kick!
  • Reduce heat to low, cover and simmer for about an hour or until greens are tender

Cauliflower Mash

  • Steam cauliflower
  • Drain
  • Chop pieces to fit into a food processor
  • Add milk, salt, pepper, butter and blend until creamy

Now it’s time to layer!

  • Grab a bowl or container you can bake in the oven
  • Add mulled apart roast pieces to the bottom
  • Top meat with gravy (if you want to make a gravy sauce any way you like, we like a brown gravy for this dish)
  • Top with collard greens and carrots or whatever veggies you prefer
  • Top with cauliflower mash
  • Bake on 375 until top is slightly firm (some like it firm, but I like mine a little soft)
